Astrid's Egg, Onion & Cheese Breakfast Potatoes — A lean protein and carb smooth combo!
When I’m in a hurry for a full workout/training before work or catching the sun by the beach, this quick prep gives me the energy I need.
Egg, Onion & Cheese Breakfast Potatoes are smooth and light, but packed with protein, energy, and flavor.
(PRO TIP: Add avocado on the side for additional savor 😉 )

Prep time: 5 minutes
Cook time: 15 minutes
Recipe yields: 2 portions
Ingredients
onions
oil/butter
garlic
potato
cheese of your preference
salt

Instructions
Boil 3 cups water.
Cut onions into thin strips.
Cut potatoes into thin slices.
Heat oil/butter in frying pan.
Toss onions and wait until soft and a bit golden.
Toss potatoes in boiling water for 8 minutes or until preferred softness.
Cook egg on medium heat pan for 3 minutes to have a liquid yolk and soft white (or cook to your preference).
Add salt to your liking.
Layer potato slices at the bottom, then the cheese slice, egg and onions as shown on this video.
